Pour remédier à la pénurie de sucre de canne, il préconise l’emploi de sucres de raisins et d’autres végétaux sucrés. Il s’intéresse à la conservation des farines, du vin et des produits laitiers. Vicaire col. 658 signale la première édition de cet ouvrage sous un titre légèrement différent (Instruction...) en 1809. Considérations générales sur les végétaux d’où l’on a extrait du sucre.
