The Mexican and Spanish section is more weighted toward the Spanish there was an 1885 Madrid edition of Gouffé's cookbook as the target market was clearly upper class Mexican households who identified with Europe at least as much as with Mexico. Still the guisado and guajolote sections feature many good Mexican recipes and the "Barbacoa mexicano" recipe lifted from the Diccionario de Cocina gives good instruction on slow cooking in an earth pit.
