Amava la cucina di mare e quella vegetariana. Chi lo conobbe ce lo descrive a tavola mentre sgranocchia un vegetale che lo faceva impazzire: il ravanello rosso. Senza neppure condirli, attaccava prima di tutto le palline, affondandovi i denti con voluttà, poi si gustava anche le foglioline del ciuffo, una per una, ben attento a non sprecare nulla. Ma la vera goduria per il suo palato erano i pomodori crudi farciti alla Nizzarda. L'eroe dei due Mondi aveva abitudini alimentari semplici ed essenziali. Sopra alla sua mensa spiccavano rustiche zuppe di verdure e legumi, stoccafisso, salame, formaggio, fichi secchi, anche se non disdegnava preparazioni come le “trenette al pesto”. "Sono stati impiegati fiumi di inchiostro per narrare le vicende storiche dell'Unità d'Italia e i comportamenti dei suoi protagonisti, che solo alla Storia spetta valutare e, allora, mi sono chiesta: perché non approfondire alcuni aspetti della quotidianità del Garibaldi? Come si nutriva, per esempio, fra un combattimento e l'altro per mantenersi in buona salute? Che comportamenti alimentari aveva? Così pure me lo sono chiesto di Camillo Benso conte di Cavour e di Vittorio Emanuele II. Garibaldi, pur prediligendo come cibo pane, formaggio e fave, seppe stare alla tavola dei re e di tutti i politici italiani e stranieri. Ebbe modo di conoscere la cucina italiana dalla punta dello stivale al Piemonte, così da essere in grado potenzialmente di scrivere un corposo capitolo sulla cucina e sulla cantina nazionale, unendo, prima ancora che la Patria, sotto un'unica bandiera la gastronomia, che in quel periodo era caratterizzata da molteplici e frammentarie cucine, ciascuna con le proprie caratteristiche territoriali. L'intento, non ultimo, è sottolineare al lettore che se difficile fu l'Unità dell'Italia dal punto di vista politico, non lo fu meno per armonizzare le variegate cucine regionali."
