The cheeses are mostly from France but a few from Italy and one from Spain are also included. In addition it also provides a brief background on the impetus and implementation of the regulatory appellations of origin EU: PDO France: AOC Italy: DOP and gives and introduction to each of the cheese making regions in France Normandy Ile-de-France Franche-Comte Rhone-Alpes Auvergne Aquitaine Midi-Pyrenees Provence-Alpes-Cote d'Azur and Corsica as well as Lombardy and Veneto in Italy and Spain's Castilla-La Mancha.
