"Les archives du Collège Wignacourt, à Rabat (Malte), conservent la correspondance échangée entre Joseph Savoye, épicier de luxe à Paris, et son fils aîné Louis, jeune abbé rattaché à l'Ordre de Malte, correspondance dont l'unique thème est le commerce des oranges et de leurs produits dérivés entre le centre essentiel de leur production, Malte, et le royaume de France. Ce sont 144 lettres qui couvrent la période qui va de 1777 à 1787, avec des lacunes pour les années 1778, 1779 et 1783, l'année 1786 étant, en outre, extrêmement limitée. Cet échange épistolaire entre un homme qui maîtrise souvent mal le français, mais qui a la tête solide, et un jeune homme sans aucun doute ambitieux, mais que l'absence de nécessité, grâce à la situation de son père, empêche d'être acharné au travail, est une mine pour la connaissance du commerce des oranges au moment même où celui-ci se développe. En effet, le dernier tiers du XVIIIe siècle vit à la fois un changement des goûts et une transformation des pratiques commerciales. La généralisation de la culture de l'orange douce transforma alors ce fruit d'un objet de luxe exotique en un produit de consommation. Dès lors, la demande accrue en entraîna une commercialisation à grande échelle. Malte en fut alors l'unique centre de production et de commerce. Mais cela ne dura pas et quelques décennies plus tard, au début du XIXe siècle, les pays méridionaux du continent étaient devenus les maîtres d'une culture de l'orange, désormais vulgarisée. A travers cette correspondance on saisit ce moment furtif de l'histoire du commerce en Méditerranée où l'on vit apparaître un nouveau produit d'échange qui faillit supplanter le coton dans les exportations de Malte, mais qui garde encore aujourd'hui la marque de son origine : l'orange maltaise."
