De Gorter riprende gli importanti studi sul metabolismo realizzati precedentemente dal Santorio e li perfeziona verificandoli ad altre latitudini e in altri climi. In questa edizione italiana, infatti, compaiono i commenti agli aforismo del Santorio che in altre edizioni non erano stati inclusi.
