In Frankfurt he had a new clinic for psychiatry in which the patients were not blocked off but treated a tremendous novelty for that time. "Die physiologische Chemie hatte nicht nur äusserlich sondern in sich selbst grosse Schwierigkeiten zu überwinden welche nicht in mangelhafter Ausbildung der Chemie im Allgemeinen lagen; und diese sind es welche es erklären warum die physiologische Chemie eine gewisse Strecke hinter der übrigen Chemie zurückgeblieben ist. Die Aufgabe war die Gesetze der Stoffwandlungen auf den lebenden Organismus anzuwenden; eine andere Methode als in der anorganischen Chemie gebräuchlich ist musste erfunden werden; die Beziehung der Organe der Functionen zu den einzelnen Stoffen musste sich klar gestalten. Die ersten Arbeiter in unserm Gebiete worunter Berzelius voransteht lieferten möglichst vollständige Uebersichten der Zusammensetzung der Körpertheile; die qualitative Methode ist das Bezeichnende dieser Periode. Quantitative Untersuchungen wurden angestellt aber ihr Resultat war die qualitative Kenntniss der verschiedenen Substanzen sie gaben keinen Schlüssel deren gegenseitige Beziehungen zu erkennen. Eine solche Methode hatte für den Physiologen und Arzt wenig Verheissendes in der That erwarb sie sich im Allgemeinen wenig Beifall. Einen neuen und entscheidenden Schritt machte die Wissenschaft mit Liebig; er führte die quantitativen Untersuchungen auf ihren einfachsten Ausdruck zurück und indem er die Ergebnisse unter einander und das so hervortretende Verhalten mit dem bekannten Verhalten der Organe des Körpers verglich gelang es ihm die innere Nothwendigkeit und Wesenheit der Beziehung dieser Organe zu einander zu durchschauen und eine Methode zu erfinden welche nichts Geringeres will als die Nachweisung der Gesetze der Stöchiometrie im beweglichen Stoffe des Organismus; welche damit die nothwendige Stellung der einzelnen Organe der Systeme zu dem ganzen Organismus in das wahre Licht zu stellen vermag. Diese Methode trägt den Beweis ihrer Richtigkeit in sich selbst sie fand den verdienten Beifall welchen wir anzustaunen genöthigt sind sie ist es welche neben manchen sonderbaren Ergebnissen schon viele wichtige Resultate gebracht hat die nicht verloren gehen werden 1 Eine Masse von Beobachtungen und Thatsachen ist bereits aufgehäuft die fast unübersehbar zu werden droht. Diese Masse wird sich beständig mehren denn die Wissenschaft ist unendlich; aber sie von Zeit zu Zeit zusammenzufassen das Wahre vom Falschen zu scheiden und den geeigneten Weg für weitere Forschungen festzusetzen ist die Aufgabe der Wissenschaft. Von diesem Gedanken ausgehend habe ich mich entschlossen eine kurze Uebersicht der physiologischen und pathologischen Chemie zu versuchen deren besondre Aufgabe sein soll Demjenigen welchem Zeit und Gelegenheit fehlen sich selbst durch das gespeicherte Material durchzuarbeiten einen Leitfaden zum Lehren und Lernen an die Hand zu geben; insbesondre dem Arzt zu zeigen wie gross bis jetzt die wirkliche Errungenschaft ist; und es war desshalb mein oberstes Ziel mit möglichster Kritik das bereits Geleistete zu durcharbeiten und das theoretische Resultat möglichst frei von den stets üppiger treibenden Hypothesen dem ärztlichen Publicum vorzulegen." Hoffmann Einleitung "H. ließ sich 1837 aufgrund seiner naturwissenschaftlichen Neigungen als Student der Medizin an der Universität Gießen immatrikulieren. 1839 ging er für ein Jahr nach Berlin um dort bei Johannes Müller physiologische und bei H. F. Link botanische Vorlesungen zu hören. Von hier aus unternahm er Reisen nach Dänemark Schweden und Rußland sowie 1841 in Gießen zum doctor medicinae promoviert nach Großbritannien Irland und Paris. 1842 ließ er sich in Gießen zunächst als praktischer Arzt nieder um sich hier jedoch noch im gleichen Jahre an der Medizinischen Fakultät zu habilitieren. Auf Anregung Liebigs arbeitete H. zunächst auf den Gebieten der physiologischen und der pathologischen Biochemie. Bald aber wandte er sich der Botanik zu. Bereits 1843 hielt er Vorlesungen über Pflanzenphysiologie. Nach 1845 las er nichts Medizinisches mehr. 1847 wurde er zum Dr. phil. promoviert. Schließlich erhielt er 1853 als Nachfolger von Alexander Braun den 1851 an der Philosophischen Fakultät neu eingerichteten Lehrstuhl für Botanik den er fast 40 Jahre lang innehatte Rektor 1865 und 1876."
