In realtà è anche una delle più potenti industrie culturali: da un lato, contesto professionale entro cui immaginare gli sviluppi della propria carriera; dall'altro, parte integrante del sistema di costruzione e distribuzione di significati, di rappresentazioni sociali, di modi di interpretare il mondo. Il music business è dunque uno spaccato delle logiche e delle politiche del mondo del lavoro, con alcune peculiarità che lo rendono ancora più destrutturato e liquido di altri contesti professionali. Allo stesso modo è ambito di cultura, dove si possono osservare meccanismi più o meno opachi di gestione del potere di orientare le letture del mondo e le aspettative su di esso. Il volume guarda alla musica come al terreno delle disparità di genere, cercando di tenere insieme questa doppia anima, di industria e di fucina culturale, osservandola attraverso lo sguardo di chi ne ha fatto un mestiere. Il gender gap è inquadrato in una cornice socio-culturale, per interpretare anche i meccanismi psico-sociali responsabili della clamorosa esclusione - o limitata partecipazione - delle donne alla produzione culturale, con particolare riguardo alla musica. Sullo sfondo i dati di una ricerca empirica condotta dal SAE Institute di Milano che ha coinvolto donne e uomini operanti in questo settore. ill., ril. Uso il wok da una decina d'anni. Probabilmente, all'inizio, è stata una scelta inconsapevole, dettata più che altro dalla simpatia per la sua forma vagamente esotica e pratica. Poi ho cominciato a sperimentare delle ricette, tutte molto veloci e saporite, ho scoperto trasmissioni televisive dedicate a questo attrezzo davvero unico e mi si è aperto un mondo: spadellare con il wok è diventato per me un esercizio giornaliero! Quando l'editore mi ha parlato di un libro sul wok, ho sorriso pensando ai tanti risotti che preparavo e alle verdure saltate, ai fritti veloci, ma poi mi sono resa conto che scrivere del wok non avrebbe significato solo mettere insieme una serie di ricette, ci volevano le basi, bisognava cercare e offrire ai lettori le informazioni che spesso sfuggono: per esempio che nel wok si può cuocere al vapore, per realizzare piatti veloci e salutari. Così questo libro è diventato argomento di conversazione e studio, non solo per me, ma anche per due espertissime in materia, due donne da wok: Annalena e Virginia. Con loro ho verificato, sperimentato e assaggiato moltissime preparazioni, capendone la tecnica di realizzazione e cercando di semplificare al massimo le ricette presentate in queste pagine. Ho esplorato nuovi sapori e abbinamenti, ma ho anche cercato di concretizzare l'idea che nel wok si può cucinare veramente di tutto, compresi i piatti della nostra tradizione.
