After brewing and breadmaking there is instruction on the keeping of cows pigs rabbits and fowls; various recipes follow. It is rarely mentioned in the history of English cookery books. This book of recipes is by the renown chef and hostelier Raymond Thuilier who in 1945 bought a Provencal farmhouse implanted in the wild countryside at the foot of the once-mighty citadel of Les Baux Unlikely as it was he decided to create a gastronomic inn in this remote corner of les Alpilles so isolated and difficult to reach that Baumanière had its own gas pump for years to help guests on their way. By 1954 the Mas baumaniere had earned its 3 Michelin stars. Thuilier died in 1993 but now l'Oustau de Baumaniere is a 5-star hotel. These recipes are entirely in French and their simple presentation masks the challenges in making them when attempted by hme cooks.
