Book is in excellent condition with deep red cloth covers, gilt print at front and spine. Bottom corners show Very slight wear only, otherwise book is as new, map endpapers, over 30 detailed line drawn maps throughout text, usually full page. Binding is solid and square, covers have sharp corners, exterior shows no blemishes, text/interior is clean and free of marking of any kind. Dust jacket shows chipping at edges, 1/4" tear top back spine. Author has six books on similar subjects: A soldier with the Arabs, The story of the Arab legion, Britain and the Arabs, War in the desert, Empire of the Arabs, The course of empire. Alcune carte lievemente brunite ma più che buon esemplare Anche se presentata come traduzione italiana del Nouveau Cuisinier François, grande classico della gastronomia francese, composto dall'Ecuyer de Cuisine del Marchese di Uxelles, in realtà come spiega Claudio Benporat in Storia della gastronomia italiana, pp. 184-89, il libro italiano non ha una parentela diretta con il testo di La Varenne, ma è la traduzione di tre di quei numerosi testi anonimi che circolavano a quel tempo in Francia e che si fregiavano della paternità di La Varenne, senza averne alcun diritto, a soli scopi commerciali. Nonostante la palese pirateria, l'opera ebbe un grande successo in Italia e fu rieditata fino all'inizio del XIX secolo. In ogni caso è da notare come i tre trattati anonimi sulla base di un analisi comparativa siano ispirati direttamente al Varenne i cui testi sono ampiamente cannibalizzati e dunque l'impatto sull'ambiente culinario italiano, considerando che molti usarono anche l'edizione francese, non si discosta poi tanto dal caso in cui la traduzione fosse condotta sui testi originali. L'opera originale riguarda ogni possibile piatto della cucina francese, con speciale attenzione alla pasticceria e alle confetture, e conobbe, tra Seicento e Settecento, notevole fortuna editoriale con numerose ristampe, circa una trentina; e concorse in modo fondamentale a fissare la cucina francese a cavallo tra XVII e XVIII secolo, con una codificazione gastronomica destinata a lasciare una traccia profonda sui grandi cuochi di Francia, in aperta rottura con le tradizioni culinarie rinascimentali italiane (malgrado indiscutibili apporto di gastronomi italiani come Bartolomeo Scappi). Nato intorno al 1615, Varenne era un sostenitore dei cibi leggeri - raccomandava l'uso di verdure fresche a "chilometri zero" - e nelle sue ricette, famose le salse, si riproponeva di conservare il sapore originario degli alimenti, rifiutandosi di seppellirlo sotto quintali di spezie esotiche. Morì nel 1678, ridotto in miseria e amareggiato dalle critiche degli altri famosi chef, che non vollero capire l’importanza storica della sua pubblicazione. Cfr. Vicaire, p. 501.
