This study examines five different aspects of the production of medieval Hebrew manuscripts while attempting to check whether the manuscripts reflect a clear historical process of progress and rationalization: ergometrically amelioration of the technical production procedures, growing efficiency in copying, greater comfort of reading and clarity of the text hierarchy, and greater faithfulness to the copied text. The study addresses the question whether the history of Jewish handwritten book production and consumption until the beginning of Hebrew printing mirrors compromises between economic constraints and functional needs or optimization of production process, as it is claimed by Ezio Ornato concerning Western manuscripts, or it is possible to discern the dominant impact of interests other than economic or functional in the history of the fabrication of Hebrew books, such as the esthetical and the 'rethorical'. These aspects are analyzed while deploying the unique empirical procedure of Hebrew quantitative codicology, based on a database of codicological features of all the extant dated Hebrew manuscripts. Procurant a un petit groupe privilegie, dans le cadre des colleges, des facilites d'etude avantageuses, elle a forme ou attire vers elle des professeurs renommes, tels Bernard de Gordon, Gerard de Solo, Arnaud de Villeneuve, Gui de Chauliac, Jean de Tournemire. L'elaboration du savoir medical, outre le recours classique aux auctoritates antiques et arabes, s'est egalement soucie d'integrer, a Montpellier, l'apport des disciplines voisines telles que la chirurgie et l'astrologie. Parmi les pathologies, les maladies de l'oeil et la lepre ont fait l'objet d'une attention particuliere, tandis que les therapeutiques mettant en oeuvre notamment les regimes de sante et integrant la medecine montpellieraine dans le cadre des pratiques universelles ont pu harmonieusement combiner l'experience et la reflexion savante. Forte de sa renommee et du rayonnement de son enseignement, la medecine montpellieraine a construit une pensee dont les manuscrits conserves temoignent de la diffusion, illustrant l'influence que Montpellier, en ce domaine comme en d'autres, notamment dans le domaine commercial, a exercee en Europe a la fin du Moyen Age.
