Quinta edizione, preferita alle precedenti per le numerose e cospique aggiunte, di questo studio di enologia e viticoltura, del noto enologo piemontese, Ottavio Ottavi (Sandigliano, 15 agosto 1849 – Casale Monferrato, 12 gennaio 1893). A lui si deve il «Giornale vinicolo italiano» nel 1875 che fu tra i primi periodici italiani completamente specializzati in materia di enologia e viticoltura. Oltre al noto giornale, scrisse diversi trattati di enologia come "La Viticoltura Nazionale" stampato dalla Hoepli o il suo notissimo "Enologia teorico-pratica" edito nel 1882 che ebbe enorme successo e contò tredici edizioni. Da ricordare anche il suo curioso scritto "Inno ai Krumiri" nel quale l'autore elogia il celebre biscotto casalese. Numerose illustrazioni nel testo.
