At the beginning of the eighteenth century sugar in France was still a luxury commodity imported in small quantities and consumed only by the very rich. By the time of the revolution sugar was so popular that riots occurred when its price rose unreasonably. In spite of its importance the sugar business has been largely ignored by historians. This comprehensive study covers all aspects of the sugar business from the procurement of African slaves who were forced to work the sugar plantations through the process of growing sugar and refining distribution and consumption. Pristine copy.

Louisiana Strate University Press hardcover books
