"The preface is signed 'Arabella Atkyns', which the B.M. catalogue says is a pseudonym. In it she states that the medical portion, which is much larger than the cookery, is taken from a common-place book of her brother who was a physician. It may be mentioned that she is the first lady who apologizes for her boldness in venturing to treat certain maladies which a lady would hardly be expected ti include. The cookery part is well arranged, the medical part is full of horrors. The treatment for appendicitis is to 'apply a live puppy to the naked belly' and follow up with a cataplasm of rotten apples or of 'sheeps-dung boil'd with milk'."?Oxford, English Cookery Books. In 4°; VII, (1 b.)., 506, (2) pp, e 10 c. di tavole in cromolitografia a colori. Legatura coeva in mezza-pelle rossa con titolo e filetti impressi in oro al dorso. Piatti foderati con carta marmorizzata coeva. Qualche piccola macchiolina di foxing in una decina delle prime carte ed in una quarantina delle ultime, mai fastidiose o intense, assai minori di quelle solitamente presenti nell'opera a causa della qualità della carta utilizzata per la stampa. Tagli spruzzati in rosso. Nel complesso, esemplare in buone-ottime condizioni di conservazione. L'opera presenta anche 137 bellissime incisioni in acciaio nel testo, riproducenti magnifici dolci ed alcune, strumenti utili nella preparazione dei dolci tutte basate su disegni originali di Ronjat. Le tavole in cromolitografia illustrano, in magnifici colori, torte, manicaretti, pagnotte dolci ecc. Prima edizione di questa celebre opera di alta pasticceria scritta dal rinomato chef e pasticcere francese, Jules Gouffé (1807 – 28 febbraio 1877) che per le sue straordinarie composizioni gastronomiche, venne chiamato “l'apôtre de la cuisine décorative”. Gouffé ebbe un enorme impatto sulla gastronomia francese e questa sua opera, fu d'ispirazione ad un'intera generazione di pasticceri e chef e la sua lezione è ancora viva oggi, grazie all'apprezzamento di diversi celebri chef contemporanei come Bernard Loiseau e Hervé This. L'autore si formò nella bottega del padre che possedeva una rinomata pasticceria in via Neuve Saint-Merri, a Parigi. Divenuto allievo di Antonin Carême all'età di soli 16 anni, rimase con lui per sette anni. Narra la leggenda, riportata la prima volta proprio in quest'opera da noi proposta che Gouffé che Carême, di passaggio, si fermò ad ammirare le “pièces montées” che erano in mostra, congratulandosi con il proprietario e offrendosi di prendere suo figlio sotto la sua protezione. Il suo primo lavoro fu durante un ballo tenuto nel 1823 dalla città di Parigi, in onore del duca d'Angoulême ottenendo un grande apprezzamento. Nel 1840 aprì un negozio rue du Faubourg Saint-Honoré che presto divenne uno dei più famosi di Francia e che cedette poi nel 1855. Nel 1867 accettò l'offerta di Alexandre Dumas e del barone Brisse, che già da tempo glielo chiedevano, di diventare chef de bouche del Jockey-Club de Paris. E' proprio quando iniziò questo lavoro che gli venne l'idea e la voglia di iniziare a scrivere libri sulla pasticceria, in modo di tramandare ai posteri le sue conoscenze e le sue idee. Rif. Therein no definite information about born and death dates of Rabiha Hanim. Her grandfather was Kani Pasha (One of Tanzimat period pashas) grandmother was Russian. Her father Rifat bey who was a diplomat Kani Pasazade Ahmet Rifat bey, (1844-1891), was one the Young Turks according to Mithat Cemal Kuntay (Avrupa'da dokuz Türk ihtilalcisi). Rabiha Hanim's first articles and writings about cookery and recipes appeared in 'Türk hayati' periodical in 1925-26 which published by Selanikli Fazli Necip. She wrote in this periodical for a short time, for the chapter under the title 'Sofra hayati' [i.e. Cuisine life]. This book by her includes 41 recipes of cake and dessert. It's not cataloged in any bibliography related to Ottoman cookery or other. Additionally, she wrote a French edition of this book in 1925 under the title of 'La bonne cuisine Turque, Facile et economique des Mets les plus Usites et Renommesdu Pays (107 recettes)'. This rare book includes 41 pastry recipes with their French names as well as add to their Turkish names. Rabia wrote a cookbook in French printed in 1925 titled 'La Bonne Cuisine Turque' in Istanbul according to Kut.
