Three plates: Frontispiece confectioner's laboratory and 2 plates illustrating kitchen utensils and motifs/decorations. The author the widow of a renowned pastry chef opened her shop in Berlin at the end of the 18th century and was able to establish herself as a refined pastry chef later moving her establishment to Paris. The book contains recipes and advice on how to make jams marmalades and various preserves. Instructions on distillation and the composition of liqueurs and creams. Also includes how to prepare chocolate coffee tea syrups lemonade punch ice cream and sorbets. With marbled boards end papers and edges this French recipe book has some rubbing and wear to the edges with a 1 cm. loss to the tail of the spine. Contemporary to Louis Pasteur Jules Salleron established a Parisian company specializing in oenological precision instrumentation developing an acetimeter followed by his renown ebulliometer still used today. Joined in the 1880s by Jules Dujardin the company grew and continues to operate today. This pictorial broadside illustrates their oenological analysis laboratory and promotes their business to a Spanish-speaking clientele. On heavy cream stock printed in red and blue. Original metal mounting bars affixed to top and bottom edges. Small bend and slight creasing on lower edge with 3.5 cm tear along lower mount and 2 cm to the upper mount; some light wear and soiling otherwise very good condition. An early wine list from the legendary Manhattan restaurant Lutèce 1961-2004. The list opens with an introductory statement to diners from the restaurant's founder André Surmain who thanks the restaurant's seven suppliers a rare credit on modern wine lists and Alexis Lichine the author of The Wines of France. Displaying a fine selection of Bordeaux Rouges & Blancs; Bougognes Rouges; Roses Loire; Alsace Rhône; and Champagnes including Lafite Rothschild dating to the 1890s Haut Brion from the 1930s and pre-depression era Mouton. Throughout each selection lists producer as well location of the vineyard. The three Alsatian wines on the list have been credited as the primary genesis of the Alsatian wine market in the United States. Julia Child Playboy Magazine and Zagat each proclaimed Lutèce the best restaurant in the United States; the New York Times gave the restaurant four stars. Spiral bound in gilt-stamped blue wrappers. Folio: 2. 10-5/8" x 6-3/4" <br/><br/>Gabler though not listing this item does briefly discuss & list divers tracts & pamphlets written in the early 1640s voicing public outrage over a contract between Charles I and the Vintner's Company of London- under said contract the Vintners agreed to pay a 46 shilling tax on every ton of Spanish & French wine & also agreed to annually buy a certain amount from English importers. In return the vintners were permitted to sell cooked victuals a proviso not in their original charter & allowed to recoup the tax by charging a penny a quart more that the officially published price. The ultimate effect was to give the Vintners' Company a monopoly on the wine trade all the while enriching the coffers of Charles I. Needless to say wine drinkers were livid. Parliament eventually responded in the consumers' favor. Gabler pp. 2-3. A handsome interesting and high quality collection of labels from throughout Europe during the World War Two years. Some highlights include a lovely woodcut for a 1943 Toscano Valpolicella A Boubee Freres Bourdeaux and a nice run of Veltliners. Some pencil text to the pages adjacent to many labels in German indicating purchase and drinking notes. In near fine condition. unknown books
4971Photographers and compiler uncredited. Large album format 30 x 23.5 cm. 23 leaves 19 with black-&-white photographs. Captions in English.Collection of photographs dating variously from the middle years of the last century assembled evidently for an English-speaking audience and providing an overview of the cellar maturation monitoring and bottling operations of the German sparkling wine specialist Henkell & Co. Famously known as the Schloß palace the complex on view was built in the Wiesbaden suburb of Biebrich between 1907 and 1909 by the architect Paul Bonatz 1877-1956 to the specifications of Otto Henkell 1869-1929. Henkel & Co. more than weathered World War II. It does not appear that the family sought ties with the National Socialists but they didn't have to. Otto's daughter Anna Elisabeth Annalies 1896-1973 married the future NS foreign minister Joachim von Ribbentrop who became a principal investor in the firm. It is worth remembering that Germans have always appreciated sparkling wine and a great deal of it was drunk in the domestic market during war time especially after the regime abolished the tax on Deutscher Sekt and Schaumwein. In 1952 Annalies petitioned for her son Rudolf to regain partial control of the company and the West German courts ruled in their favor. Henkell & Co. continued to produce Henkell Trocken under its own name until the sale of the winery in 1986. Little is ascertainable regarding the origins of the album. Otto Henkel--the elder Otto's nephew son of his brother Karl--is present in the portrait collection of company managers on the final leaf of photographs but his presence spans many years. The vintage labels have not yet been applied to bottles shown in a production line on photograph fifteen. Possibly automobiles of ca. 1950--including a white roadster--are depicted in an aerial photograph of the Schloß though sufficient details are undiscernable. And a Bizerbo scale shown in the seventeenth photograph was no longer maufactured by 1951 though of course it may have been in use well before being captured by the photographer. Unique; well-mounted and artful arrangement of professional images celebrating a revered German wine house very likely as it looked before during and immediately after the Second World War. 654359 leaves enumerating the names of grapes cereal crops and oils and their prices for nearly two centuries. Small folio 273 x 178 mm. 18th-cent. vellum over boards tail of spine defective two of four ties lacking. Burgundy: 1622-1792. A fascinating and rare survival which details the precipitous rise in the prices of Burgundian wine and the emergence of a hierarchy among regions and vintages over a 170-year period. This document consisting of three gatherings 28; 28; 3 leaves bound together and written in several legible hands provides a wealth of information on grain harvests in the region which varied greatly from year to year and indicates years with disastrous harvests. The present manuscript constitutes a unique history of agriculture in Burgundy especially pertaining to the evolving market for Côte de Nuits wine. "Burgundy had no experience like the boomtime of 18th-century Bordeaux. No new wines were invented no new districts planted. The Bordeaux picture is all expansion and creation; the Burgundy one of evolving tastes and techniques of new market forces and overall of slowly progressing definition: a more precise notion of the character style and value of the wine from each corner of the Côte.In the Côte de Nuits the notion of the 'cru' was further advanced.The vineyards were generally less overcrowded and by now planted with cuttings rather than layers; hence more deep-rooting. Increasingly in the 18th century owners of the most prestigious crus selected their best grapes to make separate cuvées the best vat being called the 'tête de cuvée'."-Hugh Johnson Vintage 1989 pp. 267 & 272. The motivation for compiling this record-book may have come from the introduction of a law in 1622 that outlawed the sale of Lyonnais and Beaujolais wines as Burgundian. The records of the first three decades consist mostly of grains and oil from the region but in the early 1670s wines begin to predominate and the lists for each year become increasingly long. It is very likely that at this point landowners would have shifted to using any arable land for vastly more lucrative grapes. By the 1690s dozens of grape varietals are noted from communes such as Auvilliers Les Cailles Chambolle Chorey Comblanchien Corgoloin Côte de Beaune Gilly Magny Saint Georges Saint Julien Les Cailles Vaucrains Pouilly Prissey etc. Prices for wine rose enormously from the 1690s and experienced peaks in 1701 1733 and 1770. Wines are increasingly categorized by the mid-18th century according to vineyard and in some cases cru. The name "de Bays" appears several times in the manuscript and the signature of "de Bays" is found at the end of the year 1771. Very few comparable documents survive and the present manuscript provides a vast amount of data on the prices for wine grapes and grains in the 17th and 18th centuries.
