51-1987San Francisco: Bergez-Frank's Old Poodle Dog Restaurant1914. 2pp. of text with members present at the banquet and 8 course Menu with wines. 7.25 x 4.625 inches. Color cover with red ribbon.Forerunner of UCSF:1868–1898 The Origins of the University of California and Affiliated Colleges'San Francisco’s First Medical SchoolsIn 1858 California surgeon Elias Samuel Cooper organized the Medical Department of the University of the Pacific with a board of trustees consisting of ten clergymen and three physicians. The first session opened in May 1859 with a class of ten attending lectures in materia medica chemistry physiology anatomy and medical jurisprudence. Dr. Cooper's death in 1862 brought confusion to the new school and in 1864 the Pacific Medical faculty "suspended" activities and joined Dr. Hugh Toland in his efforts to found a viable medical school in San Francisco. Toland's first class consisted of eight students mostly drawn from the Cooper Medical College. The faculty of this lapsed medical college were asked to serve on the Toland roster and Drs. Levi Cooper Lane Henry Gibbons Sr. and John F. Morse joined the faculty with some ambivalence. Significantly R. Beverly Cole the Dean and professor of obstetrics and diseases of women and children at Cooper was not asked by Toland to join his new faculty. In 1908 the owners of the Poodle Dog the Old Poodle Dog John Bergez Restaurant and Frank's Rotisserie merged their businesses opening Bush Street and Claude Lane under Lalanne with partners Jean B. Pon Jean Bergez Louis Coutard and Camille Mailhebeau. The restaurant now boasted five floors; the top floor offered a ballroom. A side door mimicked the earlier establishment with a birdcage elevator that took the men and their "companions" upstairs. They brought the elegance of the Nineties back to San Francisco as the Bergez-Franks Old Poodle Dog. The cuisine reflected the skills of some of the finest French chefs in the city but also included innovations unique to San Francisco. The original Louis Dressing originated in the Bergez-Franks Old Poodle Dog circa 1908; a product of the skills of Louis Coutard. San Francisco: Bergez-Frank's Old Poodle Dog Restaurant,1914. unknown

19399203New York: Imprimerie Chauvelot 149 West 21st Street 1939. Bi-fold menu 18 x 14.2 cm. 4 pages. FIRST EDITION. It does seem a bit ironic to find a list of "American Drinks" at the French Pavilion an exhibit dedicated to delivering the best of French food and drink to some of the forty-five million visitors to the 1939-40 World's Fair. The French Pavilion was a pivotal event in American culinary culture bringing a new level of fine French dining to New York City as it gave birth to Henri Soule's Lutece and its offshoots Le Pavillon La Côte Basque La Grenouille and La Caravelle. The list includes selections of Scotch Irish & Canadian and Rye along with Sherries and Ports as well as short lists of Cocktails and Fancy Drinks. Beer from Pabst Blue Ribbon Rheingold and Ruppert were also available. We've seen a later - 1940 - form of this list titled "American Drinks and Sandwiches" offering a Cream Cheese and Jelly Sandwich perhaps an indication of the financial issues the Fair in general was having with low attendance and a perception of high prices. Some light staining and age-toning to the menu's tan paper printed in blue. near very good. [Imprimerie Chauvelot, 149 West 21st Street] unknown
