Het is een boek over passie en ondernemerschap, ambities en frustraties, de druk van een Michelinster en een veel te kleine keuken. "Ik word nergens koud of warm van", zei Peter bij de eerste besprekingen over de inhoud van Portfolio. Maar zijn ambitie en gevoel voor perfectie heeft hij in het vervolg van het project niet verborgen kunnen houden.
