Slight pushing at the base of the spine and dustiness to the top-edge otherwise a near fine copy with the book-plate of Elizabeth David to the front paste-down. In the rare dustwrapper priced 6/- net to the inside flap which is in bright and clean near fine condition with NO BROWNING to the spine and scarce thus. Elizabeth David the most celebrated English food writer of the 20th century praised Boulestin in her books and adopted many of his precepts. In David's hands his personality leaps from the page and she makes a good case for the lasting impact of his work. David decides that"his special gift was to get us on the move" metaphorically and intellectually" British Food in America. Elizabeth David's copy of this book is a rare find indeed. This lovely miniature book by the incomparable book artists Peter and Donna Thomas presents a single linoleum cut by Donna in a scroll format; it would become the Book Society Distinguished Award 1999. <br /> <br /> Peter and Donna Thomas started their press in 1976; in 1988 they changed the name of their press from the "Good Book Press" to their names. They are "one of very few presses where the proprietors write the text create the art for the illustrations make the paper handset the type print on a letterpress and bind the book" n.b. Bradbury p. 302. <br /> <br /> The "four views" in the title consist of one pictorial - Donna's linocut - and three literary. Elzéar Blaze (frère de Castil Blaze), né à Cavaillon vers 1786 et mort en 1848, quitta l’armée pour se livrer entièrement à l’agriculture et à la chasse dans ses propriétés, à Chennevièress sur Marne. Dans son livre, il parle non seulement de chasse, de chiens et de gibier, mais consacre d’importantes pages à la gastronomie, et cela en vrai gourmand. « Un bon cuisinier, dit-il (p. 306 tome II) c’est le grand consolateur de l’homme civilisé. » Ses références prouvent qu’il a pratiqué la littérature gastronomique. Les pages 294 à 325 du tome II mériteraient de figurer dans les anthologies de la littérature culinaire. Il y préconise une Europe gourmande et pacifique. Selon lui, toutes les nations avec lesquelles la France a guerroyé pendant l’Empire ont fini par faire l paix devant l’excellence de notre cuisine! Au cours du volume, il donne de nombreux conseils et recettes. Celle du lièvre à la broche non écorché est royale car c’est ainsi que Louis XIII voulait qu’on les apprêtât, surveillant lui-même l’opération dans ses cuisines. - Il conseille de châtrer les lapins domestiques, pour en faire des « chapons à 4 pattes », mets incomparable! Une longue digression lui permet de raconter l’histoire des sauces (pp. 388 à 403 du tome I). Thiébaud 99. Bel exemplaire, finement relié, de ce grand classique.
