La Cuisinier: Covering all aspects of cooking of post revolutionary France. Includes engraved frontispiece titled "intérieur d'une cuisine bien ordonnée" and 3 plates depicting ovens and cooking utensils. Albert was former chef de cuisine for Cardinal Fesch Napoléon's Uncle. L'art de Conserver: Appert's signature on verso of title page. One folding plate. Appert a confectioner chef and distiller developed the first method of preserving food by enclosing it in airtight sealed containers. Pasteur later admitted his pasteurization process was largely derived from Appert's earlier methods. Appert was rewarded with a prize of 12000 francs by the French Directory Napoléon who needed to supply the growing armies with stable sustenance. CAGLE 28 36. Some foxing to interior. Reliure moderne en demi-chagrin violine, dos lisse orné d’une pièce de titre soulignée de filets dorés, tranches mouchetées. 2f, 374pp. Rare édition originale de ce manuel, le plus important jamais publié sur l'art du glacier. Ouvrage illustré de figures in-texte. La préface retrace d'abord l'histoire de la profession : les premières glaces ont été réalisées à Lyon en 1520 par un certain Casati, et "Catherine de Médicis les apporta de Florence en 1533". Le succès du métier et du produit à Paris date du XVIIe siècle et de l'installation décisive de Procope à Paris en 1660. En 1798, Velloni ouvrit à Paris un premier café proposant des glaces et granités napolitains (à l'angle de la rue Taitbout), puis fonda divers autres établissements avec le concours de son aide, Tortoni. Après l'avant-propos et les biographies avec portraits gravés des grands glaciers modernes (Procope, Tortoni, Appert, Chevet, Lulli, ce volume évoque divers ingrédients pour la cuisine et la pâtisserie, puis contient 406 recettes élaborées par les auteurs. Rappelons que P. Lacam fut le pâtissier-glacier du prince Charles III de Monaco. Charabot a été chef pâtissier au Quirinal à Rome, au Savoy à Londres, chez Quillet et Julien à Paris. Inconnu de Bitting, Vicaire, Oberlé et de toutes les autres bibliographies à l’exception de Cagle, 255. Ce dernier n’évoque cependant pas les 2 portraits hors-texte que certains exemplaires semblent comporter, absents ici.

Board edges and spine lightly sunned corners gently bruised; owner initials to title-page in ink; a few marginal pencil and ink markings not affecting the text; pps 209-232 unopened; bottom edge pps 129-136 mistrimmed not affecting the text; a few folded corners.<br /> <br /> <br /> Redding was a British journalist and writer. Whilst working in Paris he broke the news of Napoleon's defeat at Waterloo. He worked tirelessly for a number of newspapers and magazines including the Monthly and the Metropolitan. His most influential work was his History and Description of Modern Wines 1833 with later editions in 1836 1851 and 1860; the text was based on careful personal observation and gleanings from many sources including Jullien and Chaptal.<br /> <br /> Here Redding provides a more detailed examination solely of the wine trade in France due to the importance and size of the trade with Great Britain which had been recently encouraged by a liberalisation of trade laws and the taxation applied to French wines.  In addition to the expected description of the major producing areas and celebrated vineyards there is a detailed discussion of wine making practices viticulture soils the technical analysis of wine and distillation; comparative measurements taxation and consumer trends.  The major part of the work is devoted to the wines of the Gironde and the greater Bordeaux area. There are also sizeable chapters on Burgundy Champagne and the Loire. There is also a significant amount of statistical information about French wine production alcohol levels pricing and taxation together with a very useful Alphabetical Table of the important French vineyards and their departments as of 1860.<br /> <br /> <br /> Scarce. An excellent copy and a cornerstone of any serious collection on the wines of France. Significant as a detailed record of French wine production and trade before the devastation of phylloxera.<br /> <br /> <br /> § Gabler G35830; Simon BV p.109; Simon BG p.121; Noling p.342; Bitting 391.</p> Houlston and Wright unknown

Tenth Edition styled 'Ninth Edition' on title on laid paper free endpapers mildly browned title very lightly dust-soiled some mild and inoffensive age-staining principally at fore-margins and edges; nineteenth century cloth boards tan calf back with flat gilt bands second compartment with red leather label ruled and lettered in gilt worn but wholly legible BY BIRDSALL OF NORTHAMPTON uncut sometime neatly recased with new endpapers to style a remarkably bright crisp copy. The bnding is signed on front paste-down. Charlotte Mason's important collection was first published in 1773. Maclean records a further seven eighteenth-century editions; Bitting adds a Dublin imprint of 1778 as a result of which subsequent copies are one edition later than that stated hence that with 'eighth edition' on title in actually the ninth Cagle 864 and the present issue styled 'ninth edition' is actually the tenth see Cagle pp. 621-3. The present edition retains the introduction to the first edition the advertisement to the sixth edition and the appendix on poultry the dairy the kitchen and fruit gardens. Interleaved with blanks throughout. FIRST EDITION. Record of a patent infringement case between two neighboring stove foundries in Troy New York. The plaintiffs Elias Johnson and David B. Cox who owned the Clinton Foundry later owned by Fuller & Warren sued their neighbors Peter Low and George W. Hicks. The attorney for the plaintiffs William Whiting explains that the defendants "flooded the market with a stove so nearly resembling the patented stove both in name form size ornaments and construction as to deceive any person of ordinary discrimination." They even named the stove the "American Hot Air" while the Johnson and Cox stove was the "American Air Tight. "The Defendants desiring not only to take away the fruits of Pierce's invention but of his taste also actually directed their pattern makers to imitate Pierce's stove in every particular even to the ornamental carving of the pattern and the shape and position of the legs on the stove so that it would be easy to pass off their stove for Pierce's" page 12. Low and Hicks saw the strength of the suit and settled. Contemporary calf over marbled boards with black morocco cover label with the name "William Whiting" stamped in gold. Cooper". <br /> <br />Alexis Soyer was a chef and entrepreneur originally from France whose life was filled with some pretty extraordinary twists and turns. Soyer cooked in the French noble kitchens on the eve of the uprising then found his way to England cooked and designed kitchens and kitchen appliances wrote cookbooks and reorganized the cooking facilities in Crimea during the Crimean War; this book being the culmination of those endeavors. <br /> <br />Jump to America in the early 1900's and we find Lenna F. Cooper a dietitian who worked under Ella Kellogg at Battle Creek's Sanitarium was the dean of home economics at Battle Creek College and in 1930 became the food service director of Michigan State University also becoming the chief dietitian at Montefiore Hospital in New York City. Cooper wrote the book The New Cookery with her fellow Battle Creek Sanitarium dietitian Margaret Allen Hall. Inscription on verso of front cover in pen - "Presented by Lenna F. Cooper." <br/><br/> G.
