Piatti foderati con carta marmorizzata coeva. Qualche piccola macchiolina di foxing in una decina delle prime carte ed in una quarantina delle ultime, mai fastidiose o intense, assai minori di quelle solitamente presenti nell'opera a causa della qualità della carta utilizzata per la stampa. Tagli spruzzati in rosso. Nel complesso, esemplare in buone-ottime condizioni di conservazione. L'opera presenta anche 137 bellissime incisioni in acciaio nel testo, riproducenti magnifici dolci ed alcune, strumenti utili nella preparazione dei dolci tutte basate su disegni originali di Ronjat. Le tavole in cromolitografia illustrano, in magnifici colori, torte, manicaretti, pagnotte dolci ecc. Prima edizione di questa celebre opera di alta pasticceria scritta dal rinomato chef e pasticcere francese, Jules Gouffé (1807 – 28 febbraio 1877) che per le sue straordinarie composizioni gastronomiche, venne chiamato “l'apôtre de la cuisine décorative”. Gouffé ebbe un enorme impatto sulla gastronomia francese e questa sua opera, fu d'ispirazione ad un'intera generazione di pasticceri e chef e la sua lezione è ancora viva oggi, grazie all'apprezzamento di diversi celebri chef contemporanei come Bernard Loiseau e Hervé This. L'autore si formò nella bottega del padre che possedeva una rinomata pasticceria in via Neuve Saint-Merri, a Parigi. Divenuto allievo di Antonin Carême all'età di soli 16 anni, rimase con lui per sette anni. Narra la leggenda, riportata la prima volta proprio in quest'opera da noi proposta che Gouffé che Carême, di passaggio, si fermò ad ammirare le “pièces montées” che erano in mostra, congratulandosi con il proprietario e offrendosi di prendere suo figlio sotto la sua protezione. Il suo primo lavoro fu durante un ballo tenuto nel 1823 dalla città di Parigi, in onore del duca d'Angoulême ottenendo un grande apprezzamento. Nel 1840 aprì un negozio rue du Faubourg Saint-Honoré che presto divenne uno dei più famosi di Francia e che cedette poi nel 1855. Nel 1867 accettò l'offerta di Alexandre Dumas e del barone Brisse, che già da tempo glielo chiedevano, di diventare chef de bouche del Jockey-Club de Paris. E' proprio quando iniziò questo lavoro che gli venne l'idea e la voglia di iniziare a scrivere libri sulla pasticceria, in modo di tramandare ai posteri le sue conoscenze e le sue idee. Rif. Soyer cooked in the French noble kitchens on the eve of the uprising then found his way to England cooked and designed kitchens and kitchen appliances wrote cookbooks and reorganized the cooking facilities in Crimea during the Crimean War; this book being the culmination of those endeavors. <br /> <br />Jump to America in the early 1900's and we find Lenna F. Cooper a dietitian who worked under Ella Kellogg at Battle Creek's Sanitarium was the dean of home economics at Battle Creek College and in 1930 became the food service director of Michigan State University also becoming the chief dietitian at Montefiore Hospital in New York City.
