The present edition retains the introduction to the first edition, the advertisement to the sixth edition, and the appendix on poultry, the dairy, the kitchen and fruit gardens. There is true wisdom. b on page 82-83 Elizabeth David has written the letter x at the beginning and end of a passage concerning the origins of creme brulee which had been attributed by Boulestin to M. Hartmann the Swiss Chef of Trinity College Cambridge. Elizabeth David's response on the back of a letter inviting her in 1963 to stay at the Bell Inn Aston Clinton Bucks was "Creme brulee was absolutely not invented by Hartmann. It's been known early in the 18th century probably earlier". c Enclosed in an envelope at the front of the book is a Menu from Boulestin's French Restaurant dated 26.9.36. First Edition, xiv,[ii],123,[3],[2],324pp., part II has a separate title-page, pagination and register, without endpaper, cont. calf, rubbed, hinges cracked. "The preface is signed 'Arabella Atkyns', which the B.M. catalogue says is a pseudonym. In it she states that the medical portion, which is much larger than the cookery, is taken from a common-place book of her brother who was a physician. It may be mentioned that she is the first lady who apologizes for her boldness in venturing to treat certain maladies which a lady would hardly be expected ti include. The cookery part is well arranged, the medical part is full of horrors. The treatment for appendicitis is to 'apply a live puppy to the naked belly' and follow up with a cataplasm of rotten apples or of 'sheeps-dung boil'd with milk'."?Oxford, English Cookery Books. Oxford, p.71; Maclean, p.49; Bitting, p.550; Cagle, 673; Pennell, p.150; Simon, 658.

8vo., First Edition, free endpapers faintly spotted; green cloth, gilt back, a near fine copy in unclipped dustwrapper. THE ORIGINAL EDITION IS ALREADY ELUSIVE IN THIS CONDITION.
8vo., First Edition, with engraved frontispiece and 13 engraved plates, title and fore-edges mildly spotted, recipe in a neat contemporary hand on frontispiece recto; original dark green pebble-grain cloth, red roan back, wanting B7 (pp. 15-16), neatly rebacked with large fragments of old backstrip gilt laid down, yellow endpapers, a very good, firm copy of a very scarce work. RARE; AND APPARENTLY UNRECORDED IN THIS GUISE. This may well be a third edition, with an original title, of Walsh's 'English Cookery Book'. This latter work was first published in 1858 (Cagle 1045) with a second edition in 1859 (see Simon BG 1595). A possible substantiation is that all three works acknowledge [in the title] the assistance of 'a committee of ladies'. The present work is considerably more illustrated. Further to confuse, Walsh states in his Preface (dated 1857) that the present work, together with its possible forbears, are all themselves extracted from his 'Manual of Domestic Economy', the bibliography of which is equally labyrinthine. Not in BLPC; Cagle (but see 1045); Simon BG (but see 1595). We have able to find no copy in any of the standard bibliographies.
12mo., with engraved frontispiece original tissue guard present), and 7 engraved plates, some light age-soiling (mainly marginal) throughout; publisher's dark green pebble-grain cloth, upper board blocked and lettered in gilt, expertly rebacked in red roan lettered in gilt to style, hand-made endpapers, a remarkably well-preserved copy of a scarce work. This popular and influential work purports to contain 'many unpublished receipts in daily use by private families, collected by a Committee of Ladies'. It was first published in 1858 [Cagle 1045] with a second edition in 1859 [Simon 1595]. The plates depict kitchen implements, trussing and carving. From the Preface we learn that Walsh intended this work as a complement to his 'The English Housekeeper's Book' published in the same year as this edition. EXTREMELY SCARCE, ESPECIALLY IN THIS CONDITION.
