Si tratta di un importante trattato sugli alimenti, con molte ricette sia ricche sia povere. Si divulgano con particolare attenzione le conoscenze igieniche e culinarie maturate in strutture istituzionali. Viene descritto il brodo inventato dal Maresciallo Vauban per nutrire le truppe francesi; come pure le minestre create da Cadet-de-Vaux e Bouriat per i poveri di Parigi. Oberlé ritiene che la ricetta della bouillabaisse sia apparsa per la prima volta a stampa in questo libro. La seconda parte del volume è dedicata alle istruzioni per la costruzione di vari tipi di forni. Piccolo strappo alla testa della cerniera posteriore, ma molto ben conservato. Edizione originale. In folio (45,5×36 cm); grande carta tratta venne pubblicata originariamente nell’Atlante Novissimo nel 1778 per essere poi ristampata con cartiglio quasi identico ma con data e testo, in parte differente ed inserita, più volte ripiegata, nel quinto volume, della rara opera “Raccolta di tutti i viaggi fatti intorno al mondo da diverse nazioni dell’Europa” di Jean Pierre Berenger edito nel 1794-96, illustrata da varie carte dell’editore veneziano Zatta. Questa carta è più rara di quella del 1778. Un piccolo forellino al centro, ininfluente ma esemplare in buone condizioni di conservazione con bella coloritura coeva mentre i pochi esemplari conosciuti, di solito sono in bianco e nero. Come ben leggibile nello stesso cartiglio “Siccome la presente carica ha relazione con la Storia del Viaggio del Capitano Cook stampata in Parigi l’anno 1774, così si lasciarono i nomi de’ luoghi nell’idioma, in cui furono chiamati, e se ne tradussero alcuni de’ più comuni, de’ quali se ne rende ragione nella Storia stessa”. It survived long after that but never quite the same, never quite so free and easy, never quite the same true piece of Bohemia it had been in the days of golden currency, of which it was so much a part. It belonged to the days when wars were far distant, small and professional affairs, and when such things as coupons and points were unknown and unthought of. To Romano's flocked the Bohemians, men and women of the greasepaint, authors, journalists, artists of all kinds, soldiers, sailors (but not of " other ranks"), men of the law, of finance, of the race-course and the prize-rings-and crooks as well. The place was really an informal club of which they were all members and of which they respected the rules. Illustrated by J.E. Laboureur. Xavier Marcel Boulestin 1878- 20 September 1943 was a French chef restaurateur and the author of cookery books that popularised French cuisine in the English-speaking world. Publisher's pastel-blue flecked buckram boards with red leather label to the spine lettered in gilt. 198 pages. Frontispiece and many other line illustrations by J E Laboureur full page in text and as chapter vignettes and end pieces. A good copy browned to the spine with pushing and wear at the spine tips and to the corners spine marked in places. No inscriptions. Elizabeth David's book-plate to the front paste-down. The dustwrapper is priced 12s 6d net to the inside flap and is in VG condition with the usual browning to the spine with creasing and minor loss at the head. This is an important copy as it includes the following Elizabeth David ephemera: a on page 71 is a piece of paper upon which Elizabeth David has written "p.71. Marks for the cook" referring to a paragraph on that page that 'in a good meal the marks awarded to the cook should be so divided - 60% for the preparation and 40% for the choice of the dishes and the buying of the ingredients'. There is true wisdom. b on page 82-83 Elizabeth David has written the letter x at the beginning and end of a passage concerning the origins of creme brulee which had been attributed by Boulestin to M. Hartmann the Swiss Chef of Trinity College Cambridge. Elizabeth David's response on the back of a letter inviting her in 1963 to stay at the Bell Inn Aston Clinton Bucks was "Creme brulee was absolutely not invented by Hartmann. It's been known early in the 18th century probably earlier". c Enclosed in an envelope at the front of the book is a Menu from Boulestin's French Restaurant dated 26.9.36.
